Summer Fruit Cake

The best recipes are the ones that you stole from your parents and friends!
This recipe in particular is a combination between grandma recipe and friend recipe. Fresh and fruity, perfect for the Summer!

Crema Diplomatica
Ingredients
Ingredients
300 g Fresh liquid cream
200 g High quality whole milk
40 g Yolks (about 3)
40 g Sugar
15 g Corn starch (cornstarch)
7 g Gelatin in sheets
Put a bowl in the freezer and let it cool completely, then put the gelatin to soak in cold water.
Heat the milk until it reaches a boil.
Meanwhile, in another pan pour the egg yolks, sugar, corn starch and mix with a whisk until the mixture is smooth. When the milk starts to boil, pour 1/3 of it into the yolk mixture and mix. Pour the remaining milk in two more times. Return to the heat, stirring continuously for a few minutes until the cream has thickened.
Put a bowl in the freezer and let it cool completely, then put the gelatin to soak in cold water.

Take the bowl from the freezer and pour the cream inside; before mixing, add the drained gelatin and stir quickly to dissolve it and at the same time allow the cream to cool. When the cream is no longer hot, transfer it to the refrigerator.
Meanwhile, whip the cream.
Add the cream, always mixing with a hand whisk.

Pasta Frolla
Ingredients
500 gr of flour
150 gr of sugar
250 gr of butter
3 yolks and 1 whole egg
1 teaspoon of yeast
Pour the flour into a bowl and add the sugar and baking powder.
Mix everything and create a space in the center.
Add the eggs, mix quickly and add the butter.
Now mix everything with your hands until you have a nice smooth dough.

Roll out the pastry with a rolling pin and arrange it in a pan.
Keep the edges high and prick the bottom with a fork.
Bake in a preheated oven at 180 degrees for 25 minutes.
Add the Diplomatic Cream.
Decorate with fresh fruit...
